My air conditioner on my MC7 is not
currently working. Will it hurt anything
to take the compressor belt off to pick
up a little fuel mileage?

Certainly not. However, if it's not working, it's not taking any horsepower to spin a belt and a pulley. Don't expect any change to anything.
