If I drain the collant out of the system will I cause any damage if I don't refill till spring? I live in southern New Hampshire.

Tom,
It all depends on what you are draining as some will be left in the engine. If it was water and not a proper antifreeze mixture you could have freeze damage. However if what you are draining is an antifreeze mixture that won't freeze that should cause no problem. However it still would be better if you refilled with proper coolant and took it for a drive every month or so as this would reduce the possiilities of cylinder rust and bearing flat spots that prolonged idleness can cause.

The water pump seals & other rubber in the system probably won't like drying out.

Why not put proper coolant in it now?
