What's the best cleaner to use for buffing stainless? Some people say acid; others say a rubbing compound. Any ideas where to get either product?

Metal polish. Restaurant equipment suppliers have all you'd need - be aware, though, that it'll take a week to do the lower panels on a MC-9 - and it can be filthy work.
