I have a MC-7 which I polished the stainless to a mirror finish last year. Is there a product or something I should coat it with to stay that way, or will it not revert back to what it was over time just by washing it more often? I used Coach Brite (I think), but they are no longer in business. Any and all suggestions would be greatly appreciated, and THANKS IN ADVANCE !!

The stainless will stay polished if it is left untouched. What dulls it is washing with a brush and road dust or bits of sand hitting it. After 3 or 4 years, you probably will want to restore the shine with a soft buffing wheel with fine compound. Won't take anywhere near the time it took to do originally.
