Some parts use grease, some use oil others use a
oil bath. What are the differences between oil and grease? Why would a part require grease? Would oil do the trick?

oil requires a better seal system not to loose it also grease can not take a high RPM, it will dry out to easy and cause a heat problem, which brings up the heat issue, oil can be cooled and returned to the source .... just an old observers opinion.... no collage degree here !!! LOL ....

Grease sticks, good for slow moving parts, and it provides the lubrication needed.
Oil is often used to not to just lubricate, but to cool too. Your engine bearings need lots of oil to pass by in order to remove the heat, but very little pressure... oil pressure is just an indicator that oil is still being pumped and that something did not get way to loose
